African Boerwor is created from a mixture of beef & pork, dashed with vinegar, and a mild combination of spices. Shaped into a traditional coil and fastened with a bamboo skewer.
Arabian Lamb sausages are pure lamb loaded with onion, black pepper and parsley. Beef Sausages are finely minced and have a touch of tomato seasoning added to them. Usually available in thin casings. Beef & Cranberry Sausages are made with a slightly coarser beef mince, cranberry sauce, black pepper and a touch of garlic. Chicken sausages are made exclusively with Nichols Chickens with mild herbs and milk powder for a light creamy texture. |
German Bratwurst is made from a combination of coarsely minced pork & beef with a light touch of onion, salt, herbs & spices.
Greek Pork Sausages are purely Tasmanian pork with enriched seeded mustard, capsicum, and mild herbs and spices. Italian Bratwurst are similar to their German cousins with the added richness of tomato paste and paprika. London Pork are our version of the traditional English breakfast sausage. We usually make them thick, but on request can make them thin or in a chipolata size. |
Minted Lamb start with a base of finely minced lamb to which we add dried mint leaves, mint sauce and a touch of black pepper.
Tuscany Pork - Ciao Bella! - coarsely ground pork with sun-dried tomatoes, tomato paste and mozzarella cheese. Venison sausage is a mixture of finely minced lean Tasmanian Venison and local pork. For sweetness we add cranberry sauce. Other varieties are made from time to time. Who knows what we'll think of next. |
